Warm days always make me crave refreshing little dishes like this.
Today’s recipe is a simple Japanese-style salad made with myoga ginger, shiso leaves, and cucumber.
But this dish becomes especially delicious when made with my “Infinite Cucumber,” a flavorful make-ahead cucumber recipe I shared previously.
Because the cucumbers are already deeply seasoned, the salad develops a much more elegant and layered flavor.
Of course, regular cucumbers work perfectly well too.
But if you have time, I highly recommend trying it with Infinite Cucumber at least once.
The difference is surprisingly noticeable.

INGREDIENTS (Serves 2–4)
Infinite Cucumber (or regular cucumbers) 2
Myoga ginger 4
Shiso leaves 6
White sesame seeds 1 tablespoon

Dark sesame oil 1.5 tablespoons
Chicken stock powder 1/2 teaspoon

About the Infinite Cucumber
The “Infinite Cucumber” used in this recipe is one of my favorite make-ahead dishes from a previous post.
It needs to marinate for 24 hours, but that extra step gives the cucumbers a deep savory flavor that makes simple dishes like this taste surprisingly special.
Regular cucumbers are still delicious, but if you have the time, I truly recommend trying the original version.

INSTRUCTIONS
1.Cut the cucumbers into thin strips. Thinly slice the myoga ginger and shiso leaves.
2.Combine all ingredients from A and mix well. Add the vegetables and white sesame seeds, then toss everything together until evenly coated.

A Small Dish Full of Fresh Flavor
The refreshing aroma of myoga ginger and the crispness of shiso pair beautifully with the rich flavor of the Infinite Cucumber.
It’s a very simple dish, but somehow it makes the table feel calmer and a little more elegant.
This salad also goes wonderfully with drinks, making it perfect for a quiet evening at home.
