First, prepare the amount of shrimp you like. (Prepare shrimp by peeling the shells, removing the vein, etc.)Prepare Shio Koji in an amount equal to 10% of the total amount of shrimp you have prepared. (For example, if you have 300g of prepared shrimp, use 30g of Shio Koji.) Simply sprinkle the shrimp all over with Shio Koji and leave for 24 hours and you're ready to go.
This time, the batter for the fries is made using rice crackers (the kind often added to ochazuke soup base) to create a unique fried dish.
Rinse the shrimp that have been marinated in shio-koji to wash off the shio-koji, then dry them thoroughly with kitchen paper. Lightly coat the shrimp in plain flour, dip them in beaten egg (beaten egg with 1 tablespoon of flour), and finally coat the shrimp all over with arare rice crackers.
