Today, I’d like to introduce a Light Vegetable Dry Curry.
Made with a whole onion along with mushrooms and green peppers, this dish brings out the natural flavor and sweetness of the vegetables.
By using curry powder instead of roux, it has a light and gentle taste.

This vegetable-forward dry curry is satisfying without feeling heavy, making it easy to enjoy as part of your everyday meals.
It’s a simple yet comforting dish with a clean and balanced flavor.
Ingredients (Serves 2)
Onion (medium) 1
Mushrooms 6
Green peppers 3
Garlic 1 clove
Ground beef 200g
Extra virgin olive oil 1 tablespoon
Cooked rice or butter rice (see recipe) 2 servings
Curry powder 2 tablespoons
Salt 1/3 teaspoon
<For the sauce>
Ketchup 2 tablespoons
Mirin 2 tablespoons
Soy sauce 1 tablespoon
Fish sauce 2 teaspoons
Sugar 1 teaspoon
Chicken bouillon powder 1/2 teaspoon
Directions

1.Finely chop the onion, mushrooms, green peppers, and garlic.

2.Heat olive oil and garlic in a pan over medium heat. Once fragrant, add the onion and cook until softened. Add mushrooms and green peppers, and cook while allowing moisture to evaporate.

3.Add ground beef and cook until fully browned.
4.Add curry powder and salt, and continue cooking while stirring to release the aroma.


5.Mix all the sauce ingredients together, add to the pan, and cook over medium heat until most of the moisture has evaporated.


6.Serve over rice and top with a soft-boiled egg if desired.
This dry curry pairs especially well with butter rice, so I used a simple butter rice for this recipe.
