A rich and silky carbonara made with egg yolks only.
Finished with plenty of black pepper,
it’s deeply comforting on its own —
but a simple squeeze of lemon transforms everything.
The richness softens,
and the dish becomes lighter, brighter, and elegantly balanced.

【Ingredients】
Spaghetti 100g (1.7–1.9mm recommended)
Bacon or pancetta 40g
Garlic (finely chopped) 1/2 clove
Olive oil 1 tablespoon
White wine 2 tablespoons
Pasta cooking water 2 tablespoons
Black pepper to taste
Parmesan cheese to taste
Lemon (optional) as needed
<A>
Egg yolks 2
Parmesan cheese 20g
Heavy cream 60ml
【Instructions】
1.Cut the bacon and finely chop the garlic.

2.Mix all ingredients in <A>.

3.Cook bacon and garlic in olive oil over low heat until golden.

4.Add white wine and cook for about 1 minute.
5.Add cooked pasta (heat off) and toss.

6.Add <A> and pasta water, cook gently over low heat until creamy.

7.Plate and finish with black pepper and Parmesan.
Serve with lemon if desired.
【Tips】

・Cook on low heat to prevent the eggs from scrambling
・Use plenty of black pepper for a deeper flavor
・A squeeze of lemon adds a refreshing contrast
