Rosemary Zucchini Marinade with Garlic Oil | An Easy Elegant Appetizer

Today I’m sharing an easy zucchini marinade made with rosemary and homemade garlic oil ♡

The zucchini is lightly sautéed until golden, then slowly marinated in garlic oil and fresh rosemary in the refrigerator.

Freshly cooked zucchini is delicious on its own, but after resting for several hours, the oil and rosemary gently soak into the zucchini and create an irresistibly rich flavor.

It’s perfect as a chilled appetizer, a wine-friendly side dish, or a simple addition to an elegant dinner table ☆

Rosemary Zucchini Marinade with Garlic Oil

Ingredients

Zucchini as much as you like
Extra virgin olive oil a little
Fresh rosemary sprigs to taste
Salt and black pepper to taste
Garlic oil as needed

Instructions

  1. Slice the zucchini into slightly thick rounds.
  1. Lightly coat a frying pan with extra virgin olive oil and heat over medium heat.

Sauté the zucchini until both sides are golden brown, then season generously with salt and black pepper.

  1. Transfer the zucchini to a clean storage container. Add rosemary sprigs and drizzle garlic oil over the top.
  1. Refrigerate for at least half a day or overnight until the rosemary aroma fully infuses into the zucchini and oil.

Freshly sautéed zucchini is wonderful, but allowing it to rest in the refrigerator makes the flavor even richer.

Rosemary Can Be Frozen for Later Use

Fresh rosemary sprigs and parsley stems can be frozen for later cooking.

Simply wash them, dry them thoroughly, wrap them in plastic wrap, and store them in a freezer bag.

They’re perfect for adding aroma to soups, sautéed dishes, and roasted meals whenever needed ♡

Fresh rosemary can also be infused into olive oil together with dried chili peppers to create aromatic herb oil.

If making infused oil, refrigerate if necessary and use within a relatively short time.
