As the end of the year approaches, many of us start cleaning out the refrigerator.
At times like this, I like to make doria, a Japanese-style gratin that’s perfect for using up leftovers.
Today, I made a Mushroom Gratin using the tuna and corn butter rice I prepared the other day.

How to Make Mushroom Gratin
1.Mix leftover clam chowder with frozen cooked rice, then spread it in a gratin dish.
2.Sauté your favorite mushrooms and some bacon, and layer them over the rice.
3.Top with pizza cheese and any leftover vegetables, then bake in the oven until golden.
You can also use rice seasoned simply with milk or cream and a little salt.
Because the rice is already well seasoned, there’s no need for complicated seasoning.



With flavorful rice and melted cheese, you can easily make a comforting doria filled with leftover vegetables.
It’s a simple, satisfying dish—perfect for using whatever you have left in your fridge.
