Chilled Octopus Pasta with Rosemary Oil | A Refreshing Summer Recipe

Today, I’d like to share a refreshing chilled octopus pasta made with homemade rosemary-infused olive oil.

The fragrant rosemary oil pairs beautifully with lemon, green onions, and fresh shiso, creating a light yet flavorful dish that’s perfect for warmer days.

The secret ingredient is kombu tea, which adds a gentle layer of umami and brings all the flavors together.

I especially enjoy this pasta with a glass of chilled white wine ♡

Ingredients (Serves 1)

100 g pasta

70 g boiled octopus for sashimi

5 shiso leaves, thinly sliced

Rosemary Lemon Dressing

2½ tbsp rosemary-infused olive oil

3 tbsp finely chopped green onions

2 tbsp lemon juice

1 tsp powdered kombu tea

1/2 tsp grated garlic

Instructions

  1. Cut the octopus into bite-sized pieces and thinly slice the shiso leaves.
  2. In a bowl, combine all the dressing ingredients. Mix well, then add the octopus. Cover and marinate in the refrigerator for about 15 minutes.
  1. Bring 1 liter of water to a boil and add 2 teaspoons of salt (not included in the ingredient list). Cook the pasta for 1 minute longer than the package instructions.

Drain and cool immediately in ice water. Remove excess moisture thoroughly and pat dry with paper towels.

4.Add the chilled pasta to the dressing and toss quickly. Transfer to a serving plate and top with the sliced shiso leaves.
