This is also a versatile dish that’s perfect for everything from everyday side dishes and bento boxes to snacks and parties. ☆☆

【Ingredients for 5-10 people】
600g potatoes
3 boiled eggs
5 slices of ham
1 cucumber
1/2 onion
1/2 carrot
6 tablespoons mayonnaise
2 tablespoons white wine vinegar
30g butter
1.5 tablespoons whole grain mustard
(A little black pepper, to taste)

【How to make】
1. Boil the potatoes with their skins on in plenty of water until soft and you can easily pierce them with a bamboo skewer.
2. Once the potatoes are boiled, peel them while they are still hot and mash them while mixing in the butter and white wine vinegar.
3. Peel the boiled eggs and cut them in half, and cut the ham into strips.
4. Thinly slice the onion and soak in water for 5 minutes, then drain. Sprinkle with 1 teaspoon of salt (not included in the recipe) and leave for 15 minutes, then rinse thoroughly and squeeze out the water.
5. Thinly slice the cucumber and sprinkle with 1/2 teaspoon of salt. Leave for 15 minutes, then rinse thoroughly and squeeze out the water.
6. Cut the carrots into chrysanthemum shapes and place in a heat-resistant container. Cover loosely with plastic wrap and microwave at 500W for 3 minutes.
7. Add ingredients 3, 4, 5, 6, and all other ingredients to the mashed potatoes from step 2 and mix well (you can add black pepper to taste).
8.Finally, taste it and if it seems too bland, add a little salt.
