Today, I’d like to share an easy dish that comes together simply by placing everything in the oven: Oven-Baked Meatballs with Tomatoes.

Once it’s in the oven, you can leave it to cook while you use your time for something else. Using canned tomatoes keeps the dish both budget-friendly and comforting, while still feeling wholesome.
Ingredients (Serves 2)
Meatballs
300 g ground beef and pork
1/2 onion, minced
2 tbsp breadcrumbs
2 tbsp milk
1 tbsp parsley, minced
1 egg
1/2 tsp salt
1/2 tsp black pepper
Other Ingredients
Shimeji mushrooms, stems removed
Pizza cheese, as needed
1 bay leaf
Grated cheese (optional)
Tomato Sauce
1 can chopped tomatoes
25 g bacon
2 tbsp white wine
1 tsp granulated consommé
1/2 tsp salt
1/2 tsp grated garlic
How to Make
- Combine all meatball ingredients in a bowl and mix until the mixture becomes sticky.
- Lightly oil your hands (not included in ingredients), form the meatballs, and place them in a heatproof dish.
- Mix all tomato sauce ingredients in a bowl and pour over the meatballs.
- Scatter the shimeji mushrooms on top, add a bay leaf, and bake at 200°C for about 50 minutes. After 40 minutes, remove briefly, sprinkle with pizza cheese, and bake for another 10 minutes until finished.





Sprinkling grated cheese before serving gives the dish an even richer flavour.
Any leftovers can easily be transformed into other dishes, which I’ll share next time.
