【Ingredients for 3 to 4 people】
2 cups of rice

5g of dried shiitake mushrooms
350ml of dashi stock(How to make dashi stock→→here※You can also use commercially available dashi as a substitute.)
3 tablespoons of soy sauce
3 tablespoons of mirin
If you use commercially available dashi stock, be careful as it can be very salty.

1. Wash the rice and let it soak in water for about 30 minutes, then drain in a colander. Soak the dried hijiki in water for about 30 minutes and drain.
2. Add dried shiitake mushrooms to dashi stock and let it sit for at least 30 minutes.
3. Cut the chicken into 1cm cubes and cut the fried tofu and carrots into 5mm cubes.
