Horse mackerel escabeche

Today, I’d like to introduce you to “Horse Mackerel Escabeige,” a dish that all my family and friends love♪
It’s perfect as a side dish or accompaniment to alcohol, and it can be stored in the refrigerator for about four days, making it convenient for making ahead☆彡

【Ingredients for 4 people】
4 horse mackerel
100g onion
200ml extra virgin olive oil
100ml white wine vinegar
1/2 teaspoon black pepper
1/3 teaspoon salt
Cake flour to taste
Frying oil to taste
A little salt and black pepper to sprinkle on the horse mackerel


※If you don’t have white wine vinegar, you can use white vinegar instead (it will be a little more sour)※

【How to make】
1.Make the marinade. Add salt and black pepper to the white wine vinegar and mix well to dissolve the salt. Next, add the olive oil little by little and continue mixing well.


2.Thinly slice the onion and add it to the marinade from step 1 and mix gently.

3.fillet a horse mackerel into three piecesand cut it into bite-sized pieces (supermarkets and fishmongers will fillet a fish into three pieces!!)

4.Lightly sprinkle salt and black pepper on the horse mackerel in step 3, then coat it thoroughly with flour and shake off any excess flour.

5.Heat the frying oil to 170°C, add the horse mackerel (4), and fry until golden brown. (A small amount of oil is needed for frying.)After removing the horse mackerel from the oil, immediately marinate it in the marinade (2).

※It’s delicious to eat right away, but if you leave it overnight, the flavor will soak into the horse mackerel and it will taste even better※
