This simple chicken salad is made from my Shio Koji Rosemary Roast Chicken, transforming one recipe into an entirely new dish.
Tender roast chicken is shredded and tossed with a creamy honey mustard dressing, creating an elegant cold appetizer that is equally delicious served in sandwiches, wraps, or alongside fresh vegetables.

First, Prepare the Shio Koji Rosemary Roast Chicken

This recipe uses my previously published Shio Koji Rosemary Roast Chicken.
The chicken is wonderful served hot straight from the oven, but it also becomes the perfect base for cold dishes like this chicken salad.

Rosemary Chicken Salad with Honey Mustard Dressing
Ingredients
Shio Koji Rosemary Roast Chicken 1 whole leg
Roasting juices from the chicken all of it
Whole grain mustard to taste
Mayonnaise to taste
Grated garlic a small amount
Honey a small amount
Lettuce, asparagus, or other vegetables of your choice as needed
Instructions
Roast and Shred the Chicken
Roast the Shio Koji Rosemary Chicken in the oven or on a grill pan until beautifully golden.
Do not discard the juices released during roasting. They are packed with concentrated flavor. Using a baking dish or parchment paper underneath the chicken makes it easier to collect these flavorful juices.
Allow the chicken to cool completely, then remove the meat from the bone and shred into bite-sized pieces.

Prepare the Honey Mustard Dressing
In a bowl, combine the reserved roasting juices, whole grain mustard, mayonnaise, grated garlic, and honey.
Mix until smooth and creamy.

Toss the Chicken
Add the shredded chicken to the dressing and toss until evenly coated.
Adjust the mustard, honey, or mayonnaise to your own taste. A little extra mustard creates a more grown-up flavor, while additional honey gives a milder sweetness.

Serve
Arrange the chicken salad with your favorite vegetables and serve chilled.

This Rosemary Chicken Salad is one of my favorite ways to enjoy leftover roast chicken.
