Ingredients (Makes an easy batch)

Mandarin oranges (peeled) 500g
100% orange juice 400ml
Heavy cream (35% fat) 200ml
Powdered gelatin 10g
Sugar 30g
Mandarin oranges for garnish as needed

Directions

1.Sprinkle powdered gelatin over 3 tablespoons of water (not included in measurements) and let it bloom.

2.Blend the mandarin oranges with 200ml of orange juice until smooth.

3.Strain the mixture through a sieve, pressing with a spoon to extract as much juice as possible.

4.In a saucepan, combine the remaining 200ml orange juice and sugar. Heat over medium heat, stirring, and turn off the heat just before boiling.

5.Once slightly cooled to a warm temperature, add the gelatin and dissolve completely. Then add the strained juice and heavy cream, and mix well.

6.Pour into serving cups and refrigerate for about 4 hours until set. Garnish with mandarin oranges if desired.
