Today I’m sharing an easy roasted chicken recipe made with bone-in chicken, shio koji, and fresh rosemary ♡
The chicken is simply marinated and then roasted until golden and juicy.
There’s no need for complicated seasoning or heavy sauces because the flavorful juices from the chicken become the perfect natural sauce on their own.
Serve it with your favorite bread, rice, or seasonal vegetables, and it instantly feels like a beautiful dinner table at home ☆

Ingredients
Bone-in chicken thigh 1 piece
<Marinade>
Shio koji 1 tablespoon
Olive oil 1 tablespoon
Rosemary sprig 1
Grated garlic 1 teaspoon
Lemon juice 1 teaspoon
You can also use dried rosemary instead of fresh rosemary.
Instructions
1.Make the marinade. Remove the rosemary leaves from the stem and mix together with all the remaining marinade ingredients.

2.Coat the chicken evenly with the marinade. Wrap tightly or place in a storage bag, then refrigerate for half a day to overnight (overnight is recommended).


3.After marinating, gently wipe off the shio koji and rosemary from the chicken using paper towels. This helps prevent burning while cooking.
4.Roast the chicken in the oven or cook in a grill pan until beautifully golden. Serve with your favorite vegetables or side dishes.

The most important point is to enjoy the flavorful juices released while cooking the chicken ♡
The juices already contain the perfect balance of saltiness and umami, making them a delicious natural sauce for the chicken.
If you are not using a baking dish, make sure to create a small tray with parchment paper so you don’t lose any of the flavorful juices ☆
